One of the original twenty-six Grandes Marques Champagne Houses, Champagne Ayala was acquired by the Bollinger family in 2005 and remains the archetype of a great Champagne House.

Established in 1860 in Aÿ, and surrounded by the area’s most prestigious vineyards, the core range of cuvées epitomises the dry and elegant House style.

Ayala were pioneers in introducing a drier style of wine during the second half of the 19th century. Cellar master Caroline Latrive carefully ensures the House style is maintained, crafting wines renowned for their precision, delicacy and quality

A beautiful floral nose – A little Jasmine evolves with some aeration. Very delicate, refined with a lovely sense of harmony (perhaps the femininity comes from Caroline Latrive’s deft touch – She certainly captures the house style beautifully). This is a beautifully delineated Champagne with a purity and length not often found at this price. Lots of tension - Really excellent. What's more, by Champagne standards this represents truly outstanding value.

Taste & Aroma

91 Points - Josh Raynolds
Light yellow. Lively, sharply focused lemon and green apple aromas pick up deeper melon and peach qualities with air. Spicy and precise on the palate, offering juicy citrus fruit and honeysuckle flavors and a touch of candied fig. Powerful yet lively, finishing with strong punch and building mineral and floral qualities. This suave Champagne has the heft to handle rich foods and the tension to work by itself.

Region

The Champagne region is one of the country’s most important wine regions and has been producing champagne for over 1000 years. South of Reims, Épernay is the capital and main trading ground for the area. French wine laws state that only sparkling wines from this region can be labelled as Champagne and they must adhere to strict appellation standards.

The chalky soil (good for both water retention and also drainage) is perfect for the grapes needed for Champagne; Pinot Noir, Pinot Meunier, and Chardonnay. Unlike the southern regions of France, Champagne has a mild, steady climate with low levels of sunshine with the ideal amount of rain. Wines from this region command high prices, often considerably more than other sparkling wines. We recommend Billecart Salmon Cuvee Brut Sous Bois or Egly Ouriet Blanc de Noirs Grand Cru.
