The family’s own vineyards provide most of the fruit needed to make its various labels with the rest provided by fastidious growers who work to Billecart-Salmon’s exacting standards. Special cultured yeasts from the estate ensure that the cool fermentation process is unhurried and prolonged ageing on the lees thereafter guarantees that every cuvée has complexity and substance.

Region

The Champagne region is one of the country’s most important wine regions and has been producing champagne for over 1000 years. South of Reims, Épernay is the capital and main trading ground for the area. French wine laws state that only sparkling wines from this region can be labelled as Champagne and they must adhere to strict appellation standards. 

The chalky soil (good for both water retention and also drainage) is perfect for the grapes needed for Champagne; Pinot Noir, Pinot Meunier, and Chardonnay. Unlike the southern regions of France, Champagne has a mild, steady climate with low levels of sunshine with the ideal amount of rain. Wines from this region command high prices, often considerably more than other sparkling wines. We recommend Billecart Salmon Cuvee Brut Sous Bois or Egly Ouriet Blanc de Noirs Grand Cru.
