Billecart-Salmon Demi-Sec NV

£37.25 per bottle

Elegance is the key with a little sweetness, which is being supported by a fine vein of acidity. Wild flowers, honey, and lemon curd on the nose leading to a palate awash with poached pears, stone fruits, vanilla pastry and buttered brioche.

Taste & Aroma

Its pale gold colour is beautiful, emitting a constant ballet of fine bubbles in the flute. Its nose is lively with a hint of delicate white flowers and evolves towards aromas of buttered brioche. This Demi-Sec champagne is full-flavoured and is a reference for its perfect balance between sugar, alcohol and acidity.

Billecart-Salmon Champagne is among the world's most famous names in fine wine. Delicacy and purity have sustained the ability of this family-owned house to produce remarkable wines for nearly 200 years. With its home in the village of Mareuil-sur-Ay it is understated yet confident, positioning itself in only the finest retailers and dining establishments around the globe. These are wines not to be found in one’s local supermarket!

The family’s own vineyards provide most of the fruit needed to make its various labels with the rest provided by fastidious growers who work to Billecart-Salmon’s exacting standards. Special cultured yeasts from the estate ensure that the cool fermentation process is unhurried and prolonged ageing on the lees thereafter guarantees that every cuvée has complexity and substance.

Champagne Billecart-Salmon, Mareuil-sur-Ay, France

The Champagne region is one of the country’s most important wine regions and has been producing champagne for over 1000 years. South of Reims, Épernay is the capital and main trading ground for the area. French wine laws state that only sparkling wines from this region can be labelled as Champagne and they must adhere to strict appellation standards.

The chalky soil (good for both water retention and also drainage) is perfect for the grapes needed for Champagne; Pinot Noir, Pinot Meunier, and Chardonnay. Unlike the southern regions of France, Champagne has a mild, steady climate with low levels of sunshine with the ideal amount of rain. Wines from this region command high prices, often considerably more than other sparkling wines. We recommend Billecart Salmon Cuvee Brut Sous Bois or Egly Ouriet Blanc de Noirs Grand Cru.
