We adore Billecart’s zero-dosage Champagnes. Their NV is a blend of Chardonnay, Pinot Meunier and Pinot Noir from three different years, sourced from the best sites in the region. Granted, it is dry but distinctly fruity with pear skin, orchard fruit and quince.
Pale gold and bright with an energetic mousse and ultra fine bubbles. The complex nose has floral notes with hints of dried fruits and brioche. The surprisingly rich palate has a distinct biscuity flavour with notes of figs and honey and a balanced finish.

The family’s own vineyards provide most of the fruit needed to make its various labels with the rest provided by fastidious growers who work to Billecart-Salmon’s exacting standards. Special cultured yeasts from the estate ensure that the cool fermentation process is unhurried and prolonged ageing on the lees thereafter guarantees that every cuvée has complexity and substance.
The Champagne region is one of the country’s most important wine regions and has been producing champagne for over 1000 years. South of Reims, Épernay is the capital and main trading ground for the area. French wine laws state that only sparkling wines from this region can be labelled as Champagne and they must adhere to strict appellation standards.
