The fruit is destemmed, berry sorted, cold soaked and traditionally fermented. Maturation in both large oak vats and small barriques is aimed at retaining the refined fruit, floral and spice characters of the variety. Deep ruby with floral, violet aromas develop into lush plums and dark cherries along with hints of cedar, coffee and tobacco. Delicious mocha and cherry flavours cascade over the mid-palate leading into spicy white pepper and cardamom characters. The tannins are fine and powdery showing excellent persistence on a long and complex palate.
Interesting wine: 20% whole bunch pressed, 100% basket pressed, 4 percent grenache added at final blending and 65 percent of the wine aged in old barrels. The result is bright-but-complex, full of black cherry and subtle meat, violets and sap, with fine, lingering, fruit-stuck tannins. This wine will age truly, and well.

The Universal glass is recommended for richer, oaked Sauvignon Blancs such as Hughes & Hughes Barrel & Skins, white Graves or Semillon/Sauvignon blends as well as young and non-vintage Champagne. The Zalto Universal is a very good 'all-rounder', designed for all types of wine but in our opinion may not maximize the potential of certain wines quite as much as the Bordeaux or Burgundy glass.

Perched all the way over on Australia’s most south westerly tip is Margaret River. A region that accounts for less than 5% of Australia’s wine production but is responsible for 20% of the premium wines and the lion’s share of awards. Probably best known as the region that produces some of the new world’s finest Cabernet, Margaret River specialises not only in red and white, Bordeaux style wines but the region is also gaining a reputation for premium Chardonnays that rival some of the best found in Burgundy. Deep Woods have scooped up a multitude of awards across their range, including five gold medals and a staggering 98 points awarded for their Single Vineyard Cabernet Malbec 2017. Nocturne’s 2017 Cabernet Sauvignon picked up three trophies including Best Red Wine of Show. Watershed make no secret of their list of accolades, their labels crammed with gold medals and trophies and all but one of Flowstone’s wines have been awarded 95 points or above. The list of awards given to this tiny area in Australia’s most isolated region is endless and it’s no wonder that Margaret River is dominating Australia’s premium sector.
