Catalunya (or Catalonia) is located in the north east of Spain and has a long winemaking tradition being most famous for the introduction of the sparkling wine Cava. Produced in the same way as Champagne, the main grape varieties used in Cava wine-making are Macabeu, Xaral-lo and Paradella, the first and second having floral aromatics and fruity notes and the latter being used for its high acidity to create a perfectly balanced, fruity, sparkling wine. The three styles of Cava are Brut and Brut Nature Cava which make for a fruity and refreshing aperitif, Cava Rose and Vintage and Aged Cava which develop more body and a nuttier and toastier flavour profile.
