Aged 10 months in new French oak, the intensely varietal 2003 Cabernet Sauvignon Serpico boasts a fragrant black currant, floral, tobacco leaf, and spice box-scented nose along with intense fruit, wonderful purity, superb density, and remarkable elegance as well as definition. It will be interesting to see how this beauty evolves and ages.

With 10ha touching the Montagne de Reims planted 85% to Pinot Meunier, the Salmon family shows justifiable pride in Champagne’s ‘third’ variety: red summer fruits, floral and spicy notes with zest and suppleness to finish clean and dry, thanks to a low 7g/l dosage.

There is definite synergy in the blend, even it if it's the Yarra Valley that provides most of the flavour and the glue; grapefruit is in the driving seats, but there's a special texture to the mouthfeel, part fruit, part oak-derived.
Cuvée Nicolas François is made from solely Grand Cru fruit sourced from the classified Côte des Blancs vineyards (Chardonnay) and the Montagne de Reims (Pinot Noir). Its vinification, partially in traditional oak casks, underpins the generous character of this fine, elegant and rich wine. The balance of a tension controlled by the blossoming of the wine (preserved peaches, fine apple tart and lemon verbana tea) and embodied by the line of noble flavours (fresh figs and exceptional teas). It maintains a consistency reflecting a distinct personality and retains a power controlled by a well integrated low dosage.
Remarkably opulent, layered and jam-packed with flavour, the sumptuous palate has plenty to offer – cassis, peppered steak, leather and hints of nutmeg enclosed beautifully with mature, ripe tannins. Redolent with regional character, there is a certain earthiness to this wine, which adds to its savoury character. For hedonists only and certainly has the ability to go on for a further 5-8 years.
The 2015 Chaumuzy Blanc offers a deep golden hue, which is slightly frosted. The nose is opulent and rich with an unexpected power. Woody notes dominate fresh citrus zest which will round and blend over time. Brioche notes with candied citrus and dried fruits will then take over. The taste is a perfect image of the nose, revived by a beautiful acidity that gives a great freshness to the wine. This 2015 vintage is best served with seafood or oysters, in its youth. Over time, it can be enjoyed with white meat dishes with exotic or sweet notes.
This red wine has a beautiful purple colour with deep violet hues. On the nose, there is a fruity promise of blackcurrant berries, tangy red berries and fresh citrus fruits. The palate is light and fruity, true to the nose and slightly tannic. The barrel adds spicy notes which are nicely blended. This 2015 vintage can be served as an aperitif, with grilled white meat or barbecue food.
A terrior driven, 100% Chardonnay beautifully crafted from Grand Cru vineyards in the Cote des Blancs. The minerality and sheer finesse shines through to a sublime finish. Simply gorgeous!
