Sourced entirely from our Aconcagua Costa Estate from specific lots that have a significant component of metamorphic rock including slate (pizarras, in Spanish). Given the extremes of this cool climate site, as well as the uniqueness of its soils and elevations, each small block ripens at its own pace. Its proximity to the cool Pacific Ocean and its well-drained soils, with high level of slate and metamorphic rock, allow the Estate to produce Pinot Noir of exceptional complexity, depth, minerality, and natural acidity.

All grapes (85% de-stemmed, 15% whole cluster) were picked and rigorously sorted out by hand before placing them directly into small open-top fermenters. 80% of the fruit had a cold maceration at 8 to 10ºC for 5 to 7 days before starting fermentation with 100% native yeasts, followed by an extended average maceration period of up to 20 days. Daily gentle punch downs made by hand helped to keep the cap moist. Free-run wine was drained and then kept for 13 months in 100% french oak, 30% of them new.

However, the Zalto Universal is a very good all-rounder, designed for all types of wines but may not maximize the potential of certain wine as much as the Bordeaux or Burgundy glass.

Chilean producer, Errázuriz has teamed up with Louis-Michel Liger-Belair, from Domaine du Comte Liger-Belair in Burgundy’s Vosne-Romanée, who has been consultant winemaker for the new Pinot Noir, while the same region’s highly respected geologist, Françoise Vannier-Petit, has been brought in to create a detailed map of the Chilean estate’s soils. The first release of Las Pizarras Pinot Noir comprises 300 cases from the 2014 vintage. Las Pizarras was made in open-top fermenters, incorporating 20% whole clusters of Pinot Noir, using native yeasts. The wine was aged in French oak for 14 months, 50% of which was new. Although the quantity of new French oak might seem high, Louis-Michel Liger-Belaire suggested that amount, and he was right – it is very well integrated.
