Inniskillin is a Canadian winery located in Niagara on the Lake in Ontario and is noted for its production of top quality Icewine. It was founded in 1975 by Austrian chemist Karl Kaiser and Italian-Canadian agriculture graduate Donald Ziraldo, who worked tirelessly to introduce better vines and improved winemaking techniques to Niagara, and, who making the most of the extreme Canadian winter, produced their first Icewine in 1984. Their vineyards surround the winery on the Brae Burn Estate and are planted with Riesling and Vidal grapes. The mineral rich soils, warm summers and cold winters offer the perfect climatic conditions for the production of premium Icewine. Inniskillin harvest their grapes at a higher brix level than the usual minimum set by the VQA and their wines have a higher level of residual sugar – this gives their wines a richer, more intense flavour and means they merit a higher price.
