97 Points - Stuart McCloskey “I love the nose with its steely freshness – racy and cool climate, sweetened with a whiff of poached pears. The palate is much fuller than the Upper Ngumby and will appeal (enormously so) to those seeking a richer style. There’s a lovely combination of depth and mouth-watering freshness. The fruit is evidently sweeter and fills the mid-palate gloriously. Stony minerality keeps the wine in perfect check. This is a chardonnay on full parade, just bumptious and proud to be. A touch of salinity on the super long finish. Bloody brilliant – it’s as simple as that. Drink now to 2025.”
97 Points - Magdalena Sienkiewicz "So elegant yet full of energy. The perfume is simply beautiful with poached pears, citrus and crystalline minerals. Generosity describes this wine perfectly, as the palate offers breadth and magnitude without an overpowering element. Rich flavours flow in perfect balance with sweet fruit, zesty citrus, salty minerals, creamy nuttiness and an appetising savoury finish, which is super long. This will put a smile on many faces as this is one of those utterly brilliant Chardonnays which won’t require a bank loan. Clearly, the ’18 Hexham has great potential to evolve, but it is an absolute delight today."

Unravelling the story behind the exotically named Soumah, it is in fact an abbreviation of South of Maroondah, hinting at its location in the heart of Yarra Valley. Their wines however are far from exotic and instead they brim with a cool climate character and provenance of the majestic Yarra Valley. The perfect state of balance, calmness and composure of Soumah wines are expressed across the range, with the flagship wines receiving the graceful name ‘Equilibrio’. The global press wax lyrical with strings of medals including the Decanter Gold winning Equilibrio Chardonnay and Decanter Platinum Equilibrio Pinot Noir.
Region
Located just east of Melbourne in Victoria and surrounding the Yarra River, Yarra Valley enjoys a mix of influences both Mediterranean and continental with the two main soil types being the bright red, fertile, volcanic soil found mainly around Seville. Yarra Valley has a climate slightly cooler than Bordeaux enabling a range of grapes from Bordeaux varieties such as Cabernet, Merlot, Petit Verdot, Sauvignon and Semillon to Rhone varieties such as Shiraz, Mourvedre, Viognier and Roussanne, but it is the cool climate varieties, most notably Chardonnay and Pinot Noir that the region is becoming most well known for, rivalling the great wines that are coming out of Margaret River and Tasmania.
It is known as the birthplace of Victoria with vines first being planted back in 1838, the region’s wine industry grew rapidly up until the early part of the 21st Century when the wine industry ceased production due to increased demand for fortified wine. It wasn’t until the 1960’s when names such as Dr Bailey Carrodus of Yarra Yerring and Dr John Middleton began replanting that the regions industry was revived. These names who were responsible for bringing the region back to life, have inspired a new generation of winemaker to continue taking the region forward and now Yarra Valley’s wine industry is thriving.
The Yarra Valley has a reputation across Australia as being a region that is buzzing with creativity. With experimental winemakers, pushing the boundaries, creating a culture of ground breaking, innovative winemaking that is driving Yarra Valley’s reputation as one of the most exciting regions in Australia today. This tendency towards pushing the boundaries of winemaking has spawned a minimalist movement in the region and you can find many producers that are creating wines with the absolute minimum of interference, sometimes bottling the wines unfined or unfiltered.
One of the most exciting producers that we’ve discovered from Yarra Valley is Hoddles Creek Estate, owned by winemaker Franco D’Anna. Franco specialises in creating Chardonnay and Pinot Noir. With the majority of their plantings in the cooler upper Yarra Valley, Hoddles Creek keep to the Yarra ethos of minimal, gentle winemaking and have created a range of Pinot Noirs and Chardonnays that are up there with some of Australia’s very best.

Zalto Denk-Art Bordeaux Glass
Due to further lockdowns in Austria we are experiencing extended delays with our Zalto orders.
We are currently expecting our next delivery to arrive at the end of February.
The Zalto Bordeaux glass is recommended for weightier style reds, probably our most widely used glass when tasting in house, this glass is great for many different wines. The large bowl helping aerate and soften tannins whilst accentuating the wine's depth and concentration. The Bordeaux glass is the ideal choice for Cabernet Sauvignon, Shiraz, Zinfandel, Bordeaux or Rhône style blends and many other red wines. Surprisingly, it is also the glass of choice for oaked Chardonnay, the shape of the bowl accentuating the balance of ripe fruits and oak.

98 Points - Stuart McCloskey "The most floral bouquet of the three, with buttered citrus and fresh vanilla seeds drifting from the glass. Still, and not to bore, lemons, minerals and salinity are also present.. The palate offers an intense experience and not necessarily through flavour as the vitality and tension offers a wonderful shrill of excitement. The balance is exquisite and, given its age, it is difficult to pin-down exact flavours save for a little crisp, green apple. So much energy and tightly coiled like a piston waiting to explode. Minerals and citrus contrast with a marine-influenced finish which I love. Truly outstanding and will be hitting its stride in five or so years. Potentially perfect in ten. Served with Zalto Bordeaux glassware. Do not serve from the fridge. 11-13 degrees being the best temperature. Decant for a wee while as this wine needs a little aeration”.

"Dredgy as he has always been known as to his friends, has had an incredible career starting out at Petaluma in Adelaide Hills which is where he gained the nickname Dr Edge. His wines have become a cult icon of Tasmanian wine and his releases are eagerly anticipated"
Peter Dredge, also known as Dr Edge produces world class Pinot Noir and Chardonnay from three different vineyard sites in Tasmania located on the North, East and South side of the island. Three of his wines are individual single vineyard wines that are designed to show the unique expressions of each vineyard and highlight the regional diversity across Tasmania. The three wines are simply named North, made from grapes from the Stoney Rise Vineyard in the Tamar Valley, East, produced from Hazards Vineyards in the East Coast region and South which is made from Meadowbank Vineyard in the Derwent Valley. Dr Edge also produces a fourth of each varietal that is blend of all three sites, simply named Tasmania.
Peter has had an incredible career starting out at Petaluma in Adelaide Hills which is where he gained the nickname Dr Edge and where he was encouraged to travel to gain experience working a harvest at Dr Loosen in Germany. With a developing interest in Pinot Noir and cool climate winemaking, Peter took a temporary job at Bay of Fires winery in Northern Tasmania which turned into a permanent position as the senior winemaker and site manager. It was here that he was introduced to such names as Paul Lapsley, the chief winemaker at Hardys and sparkling wine legend, Ed Carr of House of Arras.
The Dr Edge wines have become a cult icon of Tasmanian wine and his releases are eagerly anticipated. The single vineyard wines are only made in small quantities each year with tiny allocations being offered, most of which are snapped up by the Australian market.

"Without question, Tasmanian wines have been one of the greatest discoveries for us over the past few years. Some of the greatest Chardonnay and Pinot Noir we’ve ever tasted come from this tiny island."
Positioned just over 400 km from mainland Australia’s south east coast, Tasmania has rapidly gained a reputation for being a premium, cool climate wine region, not just for sparkling wines but also for top quality still wines such as Chardonnay, Pinot Noir and Shiraz. With vineyard sites positioned on the north and south east side of the island taking full advantage of the cool, maritime influences and coastal breezes that help to preserve the crisp acidity and freshness that is so important in producing wines of this Calibre. Wine makers in Tasmania utilise the whole region often blending parcels from vineyards across the different sub-regions that each lend its own specific identity to the wines.
Tamar Valley on the north coast is one of the warmer sub-regions with a higher level of rainfall producing fruit with a riper character. Here we discovered Grey Sands, who offer a stunning collection of wines and produce one of our favourite Pinot Gris’ to come out of the New World. The Grey Sands site delivers plenty of tannin, colour and structure. Just to the east of this is Pipers River, one of Tasmania’s coolest regions with a terroir dominated by red, ferrosol soils.
Just to the east of this is Pipers River, one of Tasmania’s coolest regions with a terroir dominated by red, ferrosol soils. As we travel south we come to the East Coast region followed by Coal River Valley, Derwent Valley and Huon Valley. Based in the Huon Valley is Glaetzer-Dixon, responsible for producing some incredible wines and one of our favourite Pinot Noirs. Dr Edge is a producer that focuses on the unique expression of each terroir creating three individual, single vineyard Pinot Noirs and Chardonnays each from a different sub-region.
Based in the Huon Valley is Sailor Seeks Horse who brought a derelict, 6.5 hectare vineyard back to life from which they now produce exquisite Pinot Noir and Chardonnay. Hughes & Hughes can be found in a tiny hamlet called Flowerpot, who as well as Pinot and Chardonnay, produce Riesling and Sauvignon Blanc from grapes sourced from growers across the island. We’ve also added Ghost Rock to our increasing portfolio. They are one of Tasmania’s pioneering grower-producers. Over 20 years the Arnold family have almost single-handedly created the Cradle Coast wine region of Northern Tasmania. Their estate now spans 27 hectares of high density, hand-tended vineyards, mostly comprised of Pinot Noir, with significant plantings of Chardonnay and Pinot Gris in behind. Ghost Rock’s wines are driven by depth, sophistication and intensity. They produce a terrific duo of sparklings; Catherine and Zoe..

97+ Points - Stuart McCloskey “The bouquet reveals itself with honey, beeswax, melted candle wax, orange blossom and a wonderful floral lift – Smoked minerals develop with more aeration. As expected from Stolpman, the palate feel is luxurious, but the flavours are not overworked. There’s a real northern Rhône feel to the flavour profile and structure with buttered citrus, honey, slight bitter marmalade, honeysuckle and quince laying ribbons of flavour across my palate. There is intensity, but the vineyard’s limestone soils and cold nights provide just the right dose of acidity for perfect control. I find the super long finish particularly interesting as subtle, spiced orchard fruits develop with the presence of fresh, grated ginger… Drinking beautifully today and will do so for at least 5-8 years. Do not overchill – cool, room temperature being ideal. Served using Zalto Bordeaux glassware.” Tasted 27 Nov 2020
97 Points - Stuart McCloskey “Pleasingly, the wine has put-on some textural weight during the past 12-months. I would add a note of caution as to the choice of glassware. I sampled the wine using Zalto Bordeaux and Universal. The bigger Bordeaux glass is better suited in my opinion as it shows off the luscious richness and textural mouthfeel (not at all heavy) against the Universal glass, which provides less expressive notes and stimulation. The nose offers ripe apricot, confit lemon with a lovely floral array. The palate builds with an impressive level of balance and breadth. The palate is unctuous with layers of honeyed, spiced orchard fruits and honeysuckle, but remains bright and focused. The length is astonishing. Wonderful value and will be drinking perfectly for another 5-8 years.” Tasted 3 Jul 2019

Stolpman Vineyards was founded by Thomas Stolpman after discovering what he believed to be one of the greatest vinicultural sites on the planet. They have 153 acres of vineyard lying on three major limestone ridgelines in Santa Barbara County, undertaking strict, dry farming methods to push the grapes to the highest level of quality. Tom’s wife Marilyn encourage him to pursue his vinicultural dream of creating a vineyard believing that they should only ever invest in something their children can enjoy as well with their son Peter and his wife Jessica also having a role in the estate.
The vineyards are managed by Ruben Solorzano who in 2003 introduced a revolutionary program in which he began to give the vineyard workers, known as la Cuadrilla (the crew) two acres of vineyards for them to manage given no instructions so they can learn how to proactively cultivate the vineyard from pruning through to harvest. This has led a highly specialised workforce that allows for them to experiment with highly complex and unusual trellising techniques in a constant pursuit of quality. Each vintage, winemaker Sashi Moorman takes the wine from this block and blends it with other blocks to create a wine named La Cuadrilla, the profits of which go to the vineyard team as an end of year bonus.

California is the largest and most important wine region in the US – in fact, if California were a separate country it would be the world’s fourth largest wine producer! California stretches along the west coast of the USA meaning that soils and climates vary enormously depending on the area’s altitude, latitude and proximity to the Pacific Ocean. Generally the cooler regions closer to the coast are most suited to the growing of Pinot Noir and Chardonnay, whilst further inland (where the climate is much hotter) some of California’s most famous Cabernet Sauvignon wines are grown. The famous Ridge Estate is located here and produces some of the best and most sought after wines in California. If you enjoy Chardonnay, we highly recommend you take a look at Liquid Farm Winery, whose Chardonnay’s (we believe!) rival those of Burgundy. Within California you find some world famous regions including Napa Valley, Sonoma Coast and Santa Barbara and within these can be found small sub-regions, known as AVA’s with unique micro-climates creating characterful, terroir driven wines. Our selection includes some exclusives to the Vinorium such as Anthill Farms Campbell Ranch Pinot Noir 2014, Talbott’s Sleepy Hollow Chardonnay 2016 from their legendary Grand Cru rated vineyard and Chanin’s Sandford & Benedict Chardonnay 2014. Other highlights of our California collection include the cult wines from Orin Swift, the incredible wines of DuMol, a favourite of James Suckling, the 100 point scoring Continuum and many other icon of US wines like Varner, Ramey, Paul Lato and Stolpman.

97+ - 98 Points - Stuart McCloskey “The ’18 Bonadale Chardonnay is displaying both vibrant and youthful characteristics ranging from buttered citrus, lemon oil, spring flowers, spiced orchard fruit – a faint waft of pastry cream is building… The vineyard is elevated and sun-exposed providing wonderful depth and roundness mid-palate, which works a treat with the chewy extract. Minerals (chalk in particular) provides structure and some textural grip. Tensile, finely tuned (fine boned is stature) and despite the exposure to the sun, provides a ‘cool’ feel which may be indicative of the vintage. The fruit is ample, ripe and the balance is nigh on perfect. It is easy to imagine how this wine will evolve over the next ten years – the shoulders will broaden, the minerality and acidity will scale back, allowing buttery, orchard fruits to flourish. Really exquisite without the bottle age. Decant for 30 minutes, do not overchill and serve using Zalto Bordeaux glassware”
Winemaker "Fruit for this wine was selected from 10 year old vines within our Bonadale Vineyard – an elevated, sun-exposed site. The I10V1 clone (85%) and 76 clone (15%) were selected for this wine. Vines were winter pruned to 20 -25 buds for optimal fruit to vine ratios, and underwent vigorous leaf plucking toward season’s end, to ensure optimal light exposure and ripening. This wine was handpicked and whole- bunch pressed under inert conditions. Following overnight settling, juice was gravity racked and fermented in French oak – a combination of puncheon, botte and barrique. Fermentation was partially wild, following which, the wine underwent partial MLF and regular, rigorous lees stirring. After 9 months maturation in oak (40% new) the wine was bottled. No fining. No filtration."

96+ - 97 Points – Stuart McCloskey “Sourced from their Little Hampton vineyard which rests at 750 metres above sea level. The bouquet is a profusion of spices melded with poached pear, cardamon, cinnamon and lemon zest. Floral too and incredibly fine (signing of higher altitude purity). The palate is super refined, unrushed and unforced – wonderfully natural. The fruit sits towards citrus with a little baked apricot in the background. Flowers provide a lovely blanket, a new dimension – salinity finishing the flavour profile off perfectly. Very elegant indeed. Surprising density given its age. An exceptional Pinot Gris – very classical and would comfortably lie in one’s cellar for a decade or more. Drink now to 2035. Served using Zalto Bordeaux glassware.”
97 Points – Magdalena Sienkiewicz "Sampled without decanting. Super aromatic with honeysuckle, peaches, honeyed pears and sweet citrus. Toasted almonds underline its complex perfume. The palate mirrors the aromatics beautifully with additions of ripe figs and sweet spices. The balance of ripe and refreshing components is spot on. What a wonderful varietal expression, one which is not under or overdone, but just perfectly harmonious. Thanks to its superb balance, it will convince those who had a mixed experience with Pinot Gris before. It will put big smiles on fans of the grape. Sampled using Zalto Bordeaux glassware, which brings out more savoury complexities I find."

"For team Shadowfax, Macedon Chardonnay is often their go-to wine. “It displays all the good things in ultra-cool climate Chardonnay; flavour, poise, acid structure and purity. A staple of the Shadowfax brand.” says Alister."
Shadowfax Wines are headed by winemaker Alister Timms, their small and innovative winemaking team ensure only the highest quality grapes make it into each and every bottle. Shadowfax’s wines have a strong focus on regionality. Although the winery is based in Werribee, Shadowfax have extensive vineyards in the Macedon Ranges located an hour north west of Melbourne and growing ultra-cool climate Gewurztaminer, Pinot Gris, Chardonnay and Pinot Noir.

Despite being the second smallest state in Australia, Victoria is home to over 600 wineries, more than any other wine-producing state. However, Victoria does not produce the most wine, as rather than producing mass quantities of cheaper wine, its wineries tend to be smaller and more boutique in style. The cool climate here is produced by the coastal areas and this means that a wide range of wines can be made, from stunningly complex Chardonnay and delicate Pinot Noir in the Yarra Yarra Valley, to savoury and rich Shiraz from Heathcote and iconic fortified wines from Rutherglen.
Victoria is fast becoming one of our favourite regions with many new producers joining us from here, including Shadowfax, Grey Sands, and Ghost Rock.

The Zalto Universal glass is recommended for richer, oaked Sauvignon Blancs such as Hughes & Hughes Barrel & Skins, white Graves or Semillon/Sauvignon blends as well as young and non-vintage Champagne. The Zalto Universal is a very good 'all-rounder', designed for all types of wine but in our opinion may not maximize the potential of certain wines quite as much as the Bordeaux or Burgundy glass.

97+ Points - Magdalena Sienkiewicz "The 2018 Keltern burst with energy as vibrant perfume oozes form the glass. Buttered popcorn, citrus oil, ripe peaches and minerals make for a super expressive nose, but it needs at least 15 minutes in a glass to unfurl. The flavours coat every facet of the palate with great weight revealing further complexities. Creamy cashew nuts add character and richness while sweet nectarines are counterbalanced by a savoury edge. Lengthy and simply scrummy, I can see this becoming my new go-to New Zealand Chardonnay."
97 points - Sam Kim "Stunning and elegant, this is exquisitely composed and expressed on the nose showing white flesh nectarine, grapefruit, fig and lemon pith characters with nuances of spicy oak and flint. The palate exhibits exceptional concentration and focus, wonderfully enhanced by refined texture and perfectly pitched acidity. It’s splendidly poised and brilliantly structured for a long haul. At its best: 2022 to 2030."
