The leaner and more Chablisiane reminiscent of the two main Sta. Rita Hills Chardonnays, White Hill highlights the unique salinity that comes through in the ancient soils of Sta. Rita Hills. Floral and fragrant, fresh tangerine, beeswax, jasmine. Up front minerality follow by a slightly creamier mid-palate with hints of baked lemon curd. The 2015 has by far the most acidity of both wines to date. It is going to be a rock star but, will benefit from some time in bottle so please try and be patient with this one!

The mission of Liquid Farm was simple – to support local viticulture and to create old world style wines with lower alcohol and natural high acidity that they themselves would love to drink. Their goal was to create incredible Chardonnays that would rival that of Burgundy whilst creating awareness about what happens above and below ground throughout the growing experience, and telling the story of how both are inextricably linked to wine.
In order to do this successfully they would need a cool climate and were drawn to the Santa Ynez Valley, not only for the cool climate but the soil, the people and their wines. The winery is run by Nikki and Jeff who between them have years of experience in both winemaking, sales and marketing, Jeff having worked for some of the top Burgundy and Champagne houses in France and Nikki obtaining her BA in Wine and Viticulture with a focus on wine business. “Our project’s name reflects our strong belief in that philosophy. It is truly all about place in combination with the highest quality fruit and letting the varietal and regional typicity of the wine shine through from vineyard to glass… Liquid from Farming”.

California is the largest and most important wine region in the US – in fact, if California were a separate country it would be the world’s fourth largest wine producer! California stretches along the west coast of the USA meaning that soils and climates vary enormously depending on the area’s altitude, latitude and proximity to the Pacific Ocean. Generally the cooler regions closer to the coast are most suited to the growing of Pinot Noir and Chardonnay, whilst further inland (where the climate is much hotter) some of California’s most famous Cabernet Sauvignon wines are grown. The famous Ridge Estate is located here and produces some of the best and most sought after wines in California. If you enjoy Chardonnay, we highly recommend you take a look at Liquid Farm Winery, whose Chardonnay’s (we believe!) rival those of Burgundy. Within California you find some world famous regions including Napa Valley, Sonoma Coast and Santa Barbara and within these can be found small sub-regions, known as AVA’s with unique micro-climates creating characterful, terroir driven wines. For richer, oaked Sauvignon Blancs such as The Fuder, white Graves or Semillon/Sauvignon blends. For young and non-vintage Champagne we recommend Zalto Universal. However, the Zalto Universal is a very good all-rounder, designed for all types of wines but may not maximize the potential of certain wine as much as the Bordeaux or Burgundy glass.
