The 2005 Cabernet Sauvignon “Ashmead” is sourced from 70-year-old vines yielding a microscopic 0.5 tons per acre. The wine was aged for 18 months in 100% new French hogsheads (300 liter barrels). Purple in color, this sensational Cabernet has a splendid nose of pain grille, graphite, leather, black currant, and blackberry liqueur. Full-bodied and voluptuous with hidden tannins, this beautifully balanced wine will develop with 8-10 years in the cellar and drink well through 2035.

The 2006 Cabernet Sauvignon Ashmead is a single vineyard selection aged for 18 months in new French 300-liter barrels (aka hogsheads). It offers up a superb bouquet of pain grille, pencil lead, scorched earth, espresso, spice box, black currant, and blackberry liqueur. Opulent on the palate, it has gobs of succulent black fruit, well-concealed ripe tannins, impeccable balance, and a long finish. Cellar it for 5-7 years and drink it from 2014 to 2028..

A stunning effort, the 2002 Shiraz Command exhibits an inky/blue/purple colour as well as a sweet perfume of camphor, blueberries, blackberries, acacia flowers, and smoky, toasty oak. Full-bodied, opulent, and viscous, with huge, but sweet tannin, decent acidity, and a muscular, long, 40+ second finish, this is a classic, potentially long-lived, Barossa blockbuster. It’s accessible now, but ideally needs another 2-4 years of bottle age, and should keep for two decades.

The 2004 Shiraz “Command” comes from a single block of 104-year-old vines. It was aged in 100% new oak puncheons (400 liter barrels). Opaque purple-colored, this Shiraz has fabulous aromatics of smoke, melted tar, licorice, espresso, game, and blueberry compote. Layered but tight, this full-bodied wine is thick, rich, and totally hedonistic. The finish lasts for 60 seconds. However, be warned. This monumental Shiraz needs 10-15 years to fully unfold. It will provide pleasure through 2035.

It offers up a sexy/kinky bouquet of wood smoke, lavender, leather, game, mineral, black raspberry, and blueberry pie. Voluptuous on the palate, complex, and dense, it demands a decade of cellaring after which it should offer hedonists much pleasure through 2035.
