Energy balls for summer snacking

It seems just about everybody is on a health kick of some kind at the moment and quitting sugar seems to be the choice de jour. Having purchased a couple of books on the subject I am collecting quite an array of sugar substitutes in my store cupboard and have actually enjoyed venturing into the world of dates, nuts and seeds! I have had many highs and quite a few lows (the lows being caused mainly due to the bizarre chia seed) whilst trying out recipes and I have discovered a new love in the form of power balls – the best thing to get you through that afternoon slump. After having tried a few recipes I have now taken to experimenting with all sorts of different ingredients, mixing things up each time by using different nuts, nut butters and seeds. My most recent creations are packed full of good things and taste delicious (even if I do say so myself).

Power Ball Ingredients

  • 150g Mixed Nuts (I used a combination of Cashews, Pecans and Walnuts)
  • 50g Pumpkin / Mixed Seeds
  • 150g Dates
  • 1 tbsp Almond Butter
  • 1 tbsp Cashew Butter
  • 1 tbsp Crunchy Peanut Butter
  • 1 tbsp Coconut Oil
  • 2 tbsp Cacao Powder

Method

Using a food processor simply blitz the nuts and pumpkin seeds in a blender until they resemble breadcrumbs, then add all the other ingredients and blitz again until the mixture holds together. Make 12 balls by rolling a small handful of the mixture into a ball – place them a baking sheet and pop in the freezer for 30 minutes to firm. Then transfer the balls to a sealed container and keep in the fridge for up to 2 weeks.

Makes approx. 12-15 balls
