Owned by William Hoare and Rachael Jackson-Hoare, Novum wines are based in Marlborough, their first release being the 2016 Pinot Noir and 2017 Chardonnay. They harvest from small parcels rather than the whole blocks of both their family owned sites as well as other vineyards owned by their friends. They have learnt that the best fruit usually comes from a small pockets of a great vineyard. They might harvest just a few rows, or one particular side that has the best exposure, a particular ridge running through the vineyard or parcel that has a slightly different soil composition. Novum bottle their wines under cork as after trialling several closure, found that under cork their wines were a little softer on the palate. They were one of the first wineries to bottle under the new Amorin NDTech corks which have been produced using a new form of quality control technology, allowing Amorin to provide a non-detectable TCA guarantee on their corks which means that wines bottled under these will never show any cork taint.
