The olives are handpicked into open cases allowing air flow between the olives, which is essential in ensuring that no off flavours develop before pressing. To preserve quality, the olives are pressed daily and olive oil is obtained only by mechanical cold pressing. Their oil is filtered through cotton in the traditional way prior to bottling to remove any impurities which could cause it to age more quickly.
The 2015 vintage is bright green in colour with a lovely grassy, spicy perfume. This oil from cool, high altitude olive groves is spicy and fresh with an herbaceous note on the finish. Lovely intensity and organically produced.
This vast estate with 31 ha under vine stands high above the Tuscan hills with a special mesoclimate helping it to makes wines of note and distinction. Located in Mercatale Valdaro, its altitude, galesto soils and favourable temperatures also offer conditions which are conducive for the production of outstanding extra virgin olive oil for which the estate has become known. With British Prime Minister, David Cameron holidaying here in the summer of 2011 and TV Chef, Jamie Oliver using it regularly for his Fifteen Project, no further proof is required in validating how special a place this is. Lucia Bazzocchi Sanjust heads the property in conjunction with her son, Luca. Only three varieties are cultivated here: sangiovese, cabernet sauvignon and merlot. They are hand harvested only with fermentation occurring in cement vats. Depending on the wine, French barriques or tonneaux are used for ageing. Galatrona, Petrolo’s 100% varietal merlot is arguably Italy’s best expression of this grape variety. It is the flagship wine of the estate from a 3 ha plot that was planted in 1990 with the first vintage realised in 1994. Such is the quality of this bottle that it is difficult not to compare it to Petrus! Italy’s leading wine guide, Gambero Rosso has awarded it the top Tre Bicchieri recognition for consecutive years between 2004 and 2011.
