It is beautiful and works within the cascade of flavours, although I miss their more classic blend - they probably do too, to be fair. Already bottled. 45% new oak. "

The 2018 vintage was, in a word, outstanding. The growing season was steady and moderate, without spikes of heat seen in previous years. The aromatic varieties of Semillon and Sauvignon Blanc performed exceptionally well across the region with vibrant, pristine fruit and racy, natural acidity. Partially fermented in a combination of seasoned and new oak barrels, using only indigenous yeasts with no acid additions, this is a wine that showcases Deep Woods' dedication to site selection and the region.
Pale straw. The wine exhibits lifted nectarine, ripe citrus and white blossom characters. A suggestion of cedar-like oak frames the generous stone fruit characters and complex minerality. The palate is clean and lively with tremendous depth of ripe stone-fruit complexed with texture from the barrel fermentation. Bright citrusy acidity ensures a long and seamless finish providing enhanced structure and length.
Made in a semidried, Vin Santo style where the grapes are handpicked at optimum ripeness and acid balance, they are then placed on racks and dried before crushing and fermenting. This wine has no botrytis or fortification. Sublimely sweet and rich, bursting with pure pear, pineapple and cream aromas and flavours. A refined acid structure balances the sweetness to give a lingering, velvety finish.

Less intense than both the ’02 and ’07, however the palate is well-balanced on the entry with fine citrus lemon, grapefruit and just a hint of spice. Good weight and quite linear towards the finish but great persistency. Drinking now.

The blend of Sauvignon Blanc and Semillon is one of the classic Margaret River wine styles. The Sauvignon Blanc in this wine displays tropical fruit and citrus aromas which are complemented by the grassy nuances of Semillon. On the palate, the wine is fresh and vibrant showing passion fruit characters with a lingering crisp finish.

The Carbonnieux Blanc has a well defined bouquet with lovely scents of lime flower and orange blossom that is very well defined – more complex than recent vintages. Hints of custard cream emerge with aeration. The palate is well balanced with a pleasant fatness in the mouth. This is certainly a concentrated Carbonnieux and although I would have liked a little more acid bite on the finish, this is certainly one of the best white wines from the estate in recent years.
