The reason for the vineyards high quality of fruit is its proximity to the Pacific Ocean, altitude and east - north east exposure making it one of California’s coolest sites. The vineyard has great sun exposure under a vast blue sky and enjoys uninterrupted breezes that blow through the Santa Lucia Highlands. This, coupled with the cool fog that rolls in from the Ocean, means that temperatures are kept low awarding this vineyard one of the longest and slowest growing seasons in California. As a result, the grapes grown here are able to reach their highest possible potential, ripening fully, retaining acidity, preserving freshness and developing high levels of concentrated flavours and complexity.
Fathers and son team Robert Sr and Robb Talbott acquired the Sleepy Hollow Vineyard in 1994 and have brought the vineyard up to the legendary status by producing consistently outstanding wines year on year. Their dedication to the quality was awarded in 2016 when the vineyard was given its Grand Cru status, firmly cementing the Sleepy Hollow Vineyard into California’s wine history books.

The Sleepy Hollow vineyard was planted back in 1972 and has since been celebrated for its ability to produce exceptional wines year after year, being named as one of California’s Grand Cru sites by Wine Enthusiast in 2016. The vineyard is divided into three parcels, Sleepy Hollow North, West and South each growing exclusively Chardonnay and Pinot Noir.
Talbott Vineyards began in 1982 by father and son team Robert Sr and Robb Talbott. Their first vineyard was the Diamond T Vineyard planted on a mountain to in Carmel Valley. They acquired the famed Sleepy Hollow vineyard in 1994 which is located in the Santa Lucia Highlands and since then, there entire portfolio has been produced from estate grown fruit. Grapes grown in this vineyard experience one of the longest growing season in California thanks to it’s altitude and proximity to the Pacific Ocean. Cool, coastal breezes blow uninterrupted across the vines and morning fogs help to moderate the temperatures further ensuring the grapes don’t ripen too quickly, resulting in fully ripe grapes of great concentration and high levels of complexity.
Talbott has taken their inspiration from Burgundy and their original Diamond T Vineyard was planted with the Corton-Charlemagne Chardonnay clone taken from one of Burgundy’s Grand Cru Vineyards. The Diamond T Vineyard also benefits from the effects of the Pacific Ocean which helps to give the wines their characteristic freshness.
California is the largest and most important wine region in the US – in fact, if California were a separate country it would be the world’s fourth largest wine producer! California stretches along the west coast of the USA meaning that soils and climates vary enormously depending on the area’s altitude, latitude and proximity to the Pacific Ocean. Generally the cooler regions closer to the coast are most suited to the growing of Pinot Noir and Chardonnay, whilst further inland (where the climate is much hotter) some of California’s most famous Cabernet Sauvignon wines are grown. The famous Ridge Estate is located here and produces some of the best and most sought after wines in California. Zalto Denk-Art Bordeaux Glass
For weightier style reds we recommend the Zalto Bordeaux glass, probably our most widely used glass when tasting in house, this glass is great for many different wines. The large bowl helping aerate and soften tannins whilst accentuating the wines depth and concentration. The Bordeaux glass is the ideal choice for Cabernet Sauvignon, Shiraz, Zinfandel, Bordeaux or Rhone style blends and many other red wines. Surprisingly, it is also the glass of choice for oaked Chardonnay as well, the shape of the bowl accentuating the balance of ripe fruits and oak.
