Starter / Aperitif

Wines to whet our appetite is what we are looking for to begin an indulgent supper. Dry focused whites (& Champagne) make a perfect aperitif on their own but given their purity and balance, they will pair with a range of starters – salads, light fish courses and more.

Roasted Lamb

Lamb is strong in flavour and supports tannic, full-bodied red wines. Whether it is a mild spring day or a little bit chilly, Cabernet Sauvignon is a great option.

Our Top Recommendation
Robertson of Clare Max V Red 2005

96+ Points - Stuart McCloskey
100 Points for extraordinary value

Unquestionably, one of the standout Cabernet blends amongst our entire portfolio. The ’05 is nothing short of spectacular for the money particularly given the incredibly expensive use of the finest French oak barriques money can buy. At age 12, it is still an infant in terms of development, and I would not be surprised to see this lasting a further twenty+ years. The aromas are majestic with a little aeration - pen ink, rich black fruits, lead pencil shavings and spice box. I love the mouthfeel – silky tannins, voluptuous texture and rare opulence not found at this price level. There is clearly a purity with this wine which is impossible not to admire. Let me be clear – There is nothing OTT about this wine as its presence and complexity outshines many a Bordeaux Pauillac. This is an utterly magnificent, towering masterpiece and firmly sits in my ‘top 10’ best value wines of 2017. Decant for 2-3 hours and enjoy nirvana.

Traditional Roasted / Glazed Ham

Glazed ham is synonymous with sweet-and-sour flavours as well as persistent saltiness. Fruit-driven red wines with low tannins and good acidity will not only counter-balance the explosion of flavours, but also bring a great refreshing lift to this rich supper. Pinot Noir with crunchy red fruit and a little spice on the palate works brilliantly well and leaves liberty for any garnish you offer.

Our Top Recommendation
Anthill Farms Campbell Ranch Pinot Noir 2014

Stuart McCloskey

We thought the 2013 was something special, however the 2014 could well go down as one of the greatest ‘young’ Pinot Noirs to ever pass our lips. The ’14 is blessed with an incredibly intense, powerful nose - the perfume is extraordinary, almost exotic. Although young, the palate is showing beautiful structure, filigree tannins and is utterly sensuous. This is an irresistible Campbell Ranch, a little fatter and more generous than the previous two vintages. Effortless, mercurial, brilliant and will be better in 2-3 years...

Our Top Recommendation
Greystone Pinot Noir 2014

International Wine Challenge: Silver 2016

18.5+ Points - Raymond Chan

Dark, deep, ruby-red colour with youthful purple hues, lighter on rim. This has a tightly bound, firmly concentrated nose, quite slender in presentation, showing black berried fruits with subtle, savoury earthy and undergrowth complexities in the background. Dark herb and delicate violet floral elements add to the detail and interest. Medium-full bodied, the palate possesses a tightly concentrated core that blossoms with mouthfilling flavours of bright, vibrantly rich and succulent dark red and black berried fruits. The fruit is harmoniously entwined with subtle, savoury and complexing layers of undergrowth, spice, soy sauce and earthy notes. Fine-grained tannin extraction supports and balances the fruit richness, and lacy acidity provides excellent energy, as the wine flows to a very long, lingering finish of black cherry fruit. This is a well-concentrated, rich and luscious black-fruited Pinot Noir with subtle savoury complexities and a fine-textured, lively mouthfeel. Match with lamb, beef and venison dishes over the next 5-6+ years. Hand-picked fruit, predominantly clones 115 and 667 along with 5 and 777 from the ‘Greystone’ vineyard, indigenous yeast fermented with 10% whole cluster and 5% in situ in the vineyard to 13.5% alc., the wine spending 5 weeks on skins and aged 11 months in 30% new French oak.

DuMol Finn Pinot Noir 2014

Stuart McCloskey 99-100 Points

The nose is very intense and does require a good hour in a decanter to unlock its captivating bouquet of dark berries, bilberry and sous-bois. The palate is medium-bodied exquisitely balanced with ultra-fine tannins. At times the ‘Finn’ comes across as something very powerful, at other times sensory. Certainly, a mercurial Pinot Noir which washes effortlessly across your palate. Extraordinary, a moving wine and nigh on perfection.

Our Top Recommendation
Stolpman Vineyards Estate Roussanne 2015

Layer upon layer of honey, honeysuckle, peaches, apricots, marmalade and butter notes, which cover every facet of your palate. This deeply concentrated yet vibrant wine is one the most mesmerizing versions we have sampled from Stolpman. In fact, and as we declared with the inaugural 2013, this is without a doubt the best US Roussanne money can buy at this price and in the context of value, this is truly world-class...

Beringer Private Reserve Chardonnay 2013

97 Points - Stuart McCloskey

The 2013 is a beautiful and well endowed Chardonnay. Rich, buttery pastry (a touch of crème pat / crème brulée) coats the palate. This is quite simply the richest chardonnay I have come across in a very long time, yet displaying incredibly ethereal elegance. I love the notes honeysuckle, poached pear with a little citrus underpinning the evocative mouthfeel. This is a magnificent Chardonnay which drinks amazingly well now but has the quality and structure to last another 6-8 years.

Pudding

Easter Chocolate Cake or Zesty Lemon Tart?

Chocolate pudding calls for a bottle of 1928 Maury - An utter rare treat which started its life nearly a century ago. Serve slightly chilled (straight from the garden) with any chocolate based dessert or at room temperature with cheese board - a little drizzle of quality honey over the cheese helps tie the marriage perfectly.

The zingy twist in a creamy Lemon Tart requires a wine which will not only compliment the citrus character, but also bring just enough sweetness which will not overpower the dessert itself. Hobbs’ Semillon is a firework of citrus, confit of orange zest and freshly sliced pineapple. The richness of the palate with its vibrant acidity will lift and support the creaminess of the Lemon Tart. This aged Australian Semillon makes a great pairing with many fruit based desserts and rich buttery pastries.
