The flagship is the 2015 Cabernet Sauvignon, 100% Cabernet Sauvignon mostly from Champoux with the balance from Palengat and Wallula vineyards. Crème de cassis, graphite, black licorice, unsmoked tobacco, and hints of chocolate and emerge from this beauty and it continues to gain depth and nuance with time in the glass. Full-bodied, deep, and layered with an incredible purity and elegance on the palate, it's already accessible but has more than enough tannin, depth, and balance to evolve for two decades or more.

The Zalto Universal is a very good all-rounder, designed for all types of wines but may not maximize the potential of certain wine as much as the Bordeaux or Burgundy glass.

Region

Situated in the Northwest of the USA, Washington is known as the 2nd largest premium wine producer in the United States after California, with over 900 wineries located across the state. The region produces great quality wines from a range of grape varieties and is planted with almost exactly a 50/50 split of red and white grapes. The most common are Riesling and Chardonnay for the whites and Cabernet Sauvignon, Merlot and Syrah for the reds. Being slightly further inland, Washington’s conditions are perfect for Cabernet Sauvignon that produces incredible dense and powerful wines either as a single variety or as a Bordeaux style blend. The majority of wine production is based on the eastern side, the region being separated by the Cascade Mountains which give protection from the Pacific weather from the west creating a rain shadow on the eastern side of the region. This create dry almost dessert like conditions, temperatures moderated by the influence from rivers running from the mountains. Washington’s reputation is that of quality, with some iconic producers and wines that rival many of the best found in California. Quilceda Creek are one such producer who create very long-lived, powerful Cabernet Sauvignon, their 2015 vintage scoring 99 points. Gramercy Cellars are also a producer with a great reputation for producing outstanding Cabernet led wines as well as creating outstanding examples from Rhone varieties.
