This red wine has a beautiful purple colour with deep violet hues. On the nose, there is a fruity promise of blackcurrant berries, tangy red berries and fresh citrus fruits. The palate is light and fruity, true to the nose and slightly tannic. The barrel adds spicy notes which are nicely blended. This 2015 vintage can be served as an aperitif, with grilled white meat or barbecue food.

For richer, oaked Sauvignon Blancs such as The Fuder, white Graves or Semillon/Sauvignon blends. For young and non-vintage Champagne we recommend Zalto Universal. However, the Zalto Universal is a very good all-rounder, designed for all types of wines but may not maximize the potential of certain wine as much as the Bordeaux or Burgundy glass.

Champagne Salmon has a history going back three generations in Chaumuzy. The domain of 10 hectares is planted with 85% Meunier and the Salmon family have developed a unique expertise of working this black grape with white flesh, which offers roundness and fruitiness to champagne. When we received a call from them stating that they are to Meunier what Francis Egly is to Pinot Noir, our interest was piqued and after tasting the range we were utterly convinced. Stu loved them and described the 100% Meunier range as “pure, unmanipulated, beautifully honest examples which showed Meunier at its best”.

Champagne Salmon is run today by this family of artisan winegrowers, Michel, gave his name to the domain and has always worked the vines and patiently gathered different plots. He produced the first 500 bottles and is still in charge today. Olivier joined the domain in the 1980s and has been taking care to uphold the traditions for the past 30 years. Together they have diversified the blends and applied the principals of sustainable agriculture, long before it became fashionable. Today we are proud to be the exclusive UK stockist of these 100% Meunier cuvées of great quality.

Region

The Champagne region is one of the country’s most important wine regions and has been producing champagne for over 1000 years. South of Reims, Épernay is the capital and main trading ground for the area. French wine laws state that only sparkling wines from this region can be labelled as Champagne and they must adhere to strict appellation standards. 

The chalky soil (good for both water retention and also drainage) is perfect for the grapes needed for Champagne; Pinot Noir, Pinot Meunier, and Chardonnay. Unlike the southern regions of France, Champagne has a mild, steady climate with low levels of sunshine with the ideal amount of rain. Wines from this region command high prices, often considerably more than other sparkling wines. We recommend Billecart Salmon Cuvee Brut Sous Bois or Egly Ouriet Blanc de Noirs Grand Cru.
