finest winemaker…
I have been enjoying the beautiful wines from Stuart Pym for almost two decades. Stuart started his journey with Voyager Estate (1991-2000) and Devil’s Lair (2001-2008). With his life partner (and fellow winemaker) Janice. Stuart started Suckfizzle in 1996 and Stella Bella in 1999. In 2013 he handed over the Stella Bella winemaking reins and moved to Flowstone in a permanent capacity, completing the 30 year family involvement in winemaking.
I am of the strong opinion that Stuart is Australia’s finest Sauvignon Blanc winemaker – his natural ability to conjure magic from this varietal is unsurpassed. Furthermore, I have enjoyed countless, mature bottles of Suckfizzle Sauvignon Blanc which firmly stand shoulder to shoulder with many of the great Châteaux from Bordeaux.
Unquestionably, Stuart is one of Margaret River's most respected winemakers. He’s quiet, self-effacing and rarely spends time canvassing opinions, save for James Halliday who said of his maiden vintage, “There has never been a more stellar launch of a new winery venture than this.” A huge call from a guy who has seen them all in Aussie wine. But the wines speak for themselves.
I respect the way Stuart goes about his craft – he produces wine that he enjoys drinking and certainly does not give the time of day to changing his style to suit others, which is a point we raised directly with him. “Within Margaret River, there is certainly a trend towards more restrained Chardonnays, with earlier picking, and sometimes less oak. The talk is towards a more Chablis style. I am a bit old fashioned, and not moving this way.
Margaret River is blessed, and produces wines of wonderful intense fruit flavours, and I would prefer to showcase Margaret River itself, in my wines. With my Chardonnay vineyards being in the cooler southern parts of the region, they do retain some element of finesse, but also that classic Margaret River fingerprint.
There is also more and more of the lesser known varietals, but that has really been happening for some time, and certainly a move to alternative wine styles, like natural, orange, organic etc. Sauvignon Blanc is certainly getting some attention, especially now that more people are making it as a serious wine, and this is being led by Flowstone, I am proud to say. Cabernet Sauvignon is remaining pretty much on style, which is fine, because it is a signature for the region.”
We often hear of the word ‘boutique’ used to describe production but this is frequently misused – Stuart’s production levels are agonisingly small, highlighted by a scant 36 case production level for his 2018 Queen of the Earth Sauvignon Blanc. The time and care which has gone into this teacup production is staggering, highlighting the extraordinary value these wines offer.
If my memory serves me well, I believe Flowstone represents The Vinorium’s first Aussie wine agency, which provides a wistful pang of nostalgia. However, and I will be the first to admit it, I have not represented Stuart’s beautiful wines to the best of my ability. I am embarrassed to say, but I have almost forgotten him in the mela of finding new producers, which I promise will change.

Vineyard: The eighth crop from our home vineyard in Forest Grove. This 0.5 ha was planted in 2004, 1 year after buying the property. A subsequent 1.75 ha of vines was planted in 2008. Our vineyard backs in to the Boranup National Park, and is on a gravelly rise looking west to the Leeuwin Naturalist Limestone Ridge. The total crop of Chardonnay was 1.7 tonne.
The 2017 season: A warm Spring led to a healthy start to the season. A few Spring storms damaged some of the early growth, but this is the norm in this region. Vine growth was generally strong, and the vines healthy with a moderate crop. A very unusual rain event in mid January, lead to 75 – 100 mm of rain over 2 days. This got most growers a bit edgy, as it could lead to vine disease. The balance of the season was long and mild.
As it turned out, the rainfall in the middle of the driest part of the year was a boon to most vines, giving them a mid-season boost. This has resulted in wines with remarkable intensity of flavour, and retention of good acid levels. Despite everyone being a bit edgy about the season, I have no doubt that it will be the 10th great consecutive vintage for Margaret River. We are spoiled.
Winemaking: These grapes were hand harvested on the 18th February, and whole fruit pressed to retain texture and delicacy. Fermentation was in French oak barriques, 50% of them new, 50% one year old. Following fermentation, mlf was allowed to start, and run through to completion. The wines stayed in these barrels for a total of 18 months, with occasional stirring to suspend the lees. This extended barrel residence time helps to integrate the higher proportion of new oak. The wine was then allowed to relax in bottle for a further 15 months prior to being made available for sale.
97-98 Points – Stuart McCloskey “My primary piece of advice is to decant for at least 30 minutes as the wine needs some aeration and for Pete’s sake, do not overchill. The bouquet is sensational and juxtaposes between oyster shell, quartz, saline and underlying aromas of citrus fruit - it flows with minerality. Spiced orchard fruit after 20 minutes in the glass. Warmed, fresh bread after 30 minutes. The salinity and minerality follow through to the palate. The palate is perfectly balanced with a killer streak of acidity, running north to south. Texturally, the wine offers some broadness, but it does require a further 5-10 years before reaching its peak. From a structural perspective, this reminds me of Leeuwin Art Series Chardonnay. In fact, I am not entirely sure I would be able to tell the difference in a blind tasting. The flavours fan out with touches of spiced apple and pear, this is glorious in a restrained sense. The potential is palpable… one for the cellar with the occasional bottle served over the coming 5-7 years. Served using Zalto Bordeaux glassware.”
97-98 Points – Magdalena Sienkiewicz “Please decant, as this wine really unfurls even with just 20 minutes in a glass. Rich citrus, spiced orchard fruit and sea spray build beautifully on the nose. The palate is impressively deep and textural. Lemon curd and spiced apple give an entry to a silky smooth, expansive structure which reveal further complexities of toasted hazelnuts and cooling minerals. A beautifully detailed wine and its extreme length is truly admirable. Queen of the Earth Chardonnay is clearly built for the long run. Please decant for an absolute minimum of 30 minutes or cellar for another 5+ years. Sampled using Zalto Bordeaux glassware following 1 hour of decanting.”

Vineyard: From one single vineyard in Karridale, in the southern climes of Margaret River, leased and operated by Flowstone. This cooler part of the region gives flavours of pear and grapefruit, and more finesse and restraint to the palate. Ripening is later, and natural acids retained while varietal characters can develop. This vineyard is planted to the Dijon clones 95 and 96.
The 2017 season: A warm Spring led to a healthy start to the season. A few Spring storms damaged some of the early growth, but this is the norm in this region. Vine growth was generally strong, and the vines healthy with a good crop. The ripening period of February and March was cool, with the ripening process slowed. This leads to wines of finesse, purity, and a wonderfully fresh lightness.
A very unusual rain event in late March, lead to 50 - 75mm of rain over 2 days. The whites were well picked by then, so it was not an issue in this regard.. April was long, mild and dry – a godsend for the reds.
This was a bit of a white-knuckle vintage, but the results are stunning. Another great year for Margaret River!!

Following fermentation, mlf was allowed to start, and run through to completion. The wines stayed in these barrels for a further 11 months, with occasional stirring to suspend the lees. The wine was blended in February of the following year, minimally fined, filtered and bottled. The wine was then allowed to relax in bottle for a further 30 months prior to being made available for sale.
97 Points – Stuart McCloskey “And here we are – a wine which aptly displays the difference in drinkability between Stuart’s Queen of the Earth and estate wines. The bouquet is simply glorious with drifts of marine scented citrus and orchard fruits interwoven with fine scents of jasmine. The palate is fresh, incisive and leads with a wonderful streak of mineralité which I adore. This is a serious wine and should be treated with respect. Store carefully, keep out of a cold fridge, decant and serve using your best glassware. Serve blind and you would believe you are consuming Grand Cru Chablis (try it and please let me know). Texturally, this is on point and delivers crashing waves of citrus / mineral tinged fruit. Wonderful acidity, beautifully balanced with a pleasing accent of salinity. A truly ‘wow’ wine for the respectable price tag. I adore the warming ginger and lemon zest on the incredibly long finish. Simply gorgeous. Drink now to 2030. Served using Zalto Bordeaux glassware.”

The perfume is beautifully composed with lemon oil, honeyed pears and white flowers together with maritime minerals and oyster shell, a hallmark of Margaret River Chardonnays. The palate is simply superb and shows quality you’d expect from wines carrying a higher price tag. Ruby grapefruit, toasted hazelnuts and a racy minerality highlight its complex and sophisticated palate with textures flowing endlessly in perfect harmony. Sauvignon Blanc that is serious and sophisticated – this is the Flowstone signature. The Queen of the Earth Sauvignon Blanc is from one little corner of our Sauvignon Blanc vineyard. It is a wine of refinement, purity, and utter beauty. Sauvignon Blanc as it can be.
Vineyard: Our special vineyard in Karridale – the southern part of Margaret River. The Flowstone Sauvignon Blanc has always come from this vineyard, but as of 2017, we lease and run it. This gives us a great more input, and insight into the vineyard. This additional level of understanding has led to the creation of this wondrous wine. The grapes for this wine come from one little corner of the vineyard, tucked away, but on lovely gravelly soil.
Winemaking: These grapes were hand harvested on the 17th and 20th of March, and whole fruit pressed to retain finesse and texture. Fermentation was in Demi Muids (600litres, and 45 mm thick staves) only, of which none were new.. Following fermentation, the wine stayed in these barrels for a further 17 months, with occasional stirring to suspend the lees. The wine from these barrels was blended in August of the following year, minimally fined, filtered and bottled. The wine was then allowed to relax in bottle for a further 12 months prior to being made available for sale.
97 Points – Stuart McCloskey “A fascinating bouquet which isn’t shy in coming forward. The concentration of perfumed gooseberry, guava, roasted pineapple and sweet melon is remarkable. Zips of acidity, citrus and a floral spray add to the complexity. Very impressive. The palate feel is super generous and the length incredibly long, the flavours last for minutes. Where to start with the flavours as there are so many to get through. Citrus peel flows into white flowers which in turn drift beautifully into fresh garden mint. I detect orchard fruits, a tropical undercurrent and lemongrass – everything feels exotic without being exaggerated. The minty finish is epically long – salinity is the final act as the wine drifts away after five minutes. Texturally, this is brilliant and oozes sophistication. Silky smooth and will keep for 5-8 years. Served using Zalto Universal glassware.”
97-98 Points – Magdalena Sienkiewicz “Stuart Pym’s admiration and dedication to producing the best Sauvignon Blanc in Australia is clearly demonstrated in his Queen of the Earth. The perfume is lush and oozes beautiful notes of elderflower, lemongrass, passionfruit and guava. Crystalline minerals and delicately toasty elements reminiscent of caramelised pineapple, emerge with aeration. The palate is impressively structured and coating every facet with elegant weight and layered flavours. There is intensity of fruit and minerals, great length and an impressive level of precision and detail. So much personality and class. Delicious today, it will continue to evolve in the cellar for at least the next 5-8 years. Sampled using Zalto Universal glassware with 30 minutes of decanting (highly recommended).”

Flowstone’s Touriga is a blend of Margaret River Cabernet Sauvignon, and the classic Portuguese variety; Touriga (also known as Touriga Nacional). Cabernet Sauvignon is well known in Margaret River, however Touriga less so. Touriga is one of the main varieties in the Portuguese Vintage Ports and often considered by many to be Portugal’s finest. Touriga has wonderful spicy red and black fruit flavours, with a medium to full bodied palate, and puts an interesting twist on Cabernet Sauvignon.
Vineyard: The Cabernet Sauvignon is from a single vineyard in Willyabrup, planted in the late 90's. It is on lateritic gravelly loam, with a gentle westerly aspect. The Touriga is from a small patch of vines in Yallingup, planted in the late 70's. It is a gnarly old patch of vines, high on the gravelly ridge overlooking Geographe Bay.
The 2015 season: The ninth consecutive great season for Margaret River. Following a very wet winter, spring was mild, and the rains dried up as summer began. Summer was warm with a few hot spikes, but ample water in the ground kept the vines in good condition. The ripening period of January and February was moderate, with little or no rain - perfect conditions for the vines. Flavours could develop evenly, and there was no threat of disease.
Winemaking: The Cabernet Sauvignon grapes were hand harvested on the 29th March, the Touriga on 2nd April. Both varieties were made separately, but in similar manners. Fermentation was in a few open 1 tonne fermenters, with thrice daily plunging. There was no temperature control. Following fermentation, the Cabernet Sauvignon wine remained on skins for 19 days, the Touriga 17 days. Mlf occurred during this period. The wine was subsequently pressed. Pressings wine was not separated. The wine was allowed to settle for 2 weeks, and then transferred to French oak barriques, 20% new. It remained in these barrels for 24 months.
Following barrel maturation, the barrels were blended, fined with free range egg whites, and prepared for bottling.
After bottling, the wine was then allowed to relax in bottle.
96+ - 97 Points – Stuart McCloskey “I have little tasting experience with this blend nonetheless, it’s starting to blossom beautifully. The bouquet reveals swathes of black fruits – the sweetness of the blackcurrant contrast wonderfully with the cooling tones of graphite and cedar. This is beautifully focused and structured. I like the freshness - there’s a Burgundian feel which I really enjoy. Similar to Stuart’s Cabernets – this is wonderfully elegant and graceful with fine, filigree tannins. Perhaps a tad more compact, but a lovely wine to contemplate the afternoon with, rather than drink and ignore… It improves with a few hours in the decanter, becoming more expressive whilst retaining a regal elegance. I would like to take a bottle home to acquaint myself fully (I will report back soon). Very drinkable today, but it will continue to develop for a further five years. Decanted for 2-3 hours and served using Zalto Bordeaux glassware.”
97+ Points – Magdalena Sienkiewicz “I admire its perfume. It’s everything I love about Cabernet Sauvignon with a touch of intrigue. Blackcurrant and mulberries ooze from the glass together with pencil lead, sweet spices, fruity dark chocolate and violets. As Stuart Pym nicely puts it; “a wonderful blend of the familiar, and the inviting.” The palate is equally captivating. The succulent red fruit is wrapped gently in a vast array of spices, graphite and savoury textures. Finished gracefully with everlasting minerality. Ridiculous value for money given how wonderful and classy this is. Sampled using Zalto Bordeaux glassware following 4 hours of decanting.”

98 Points - Stuart McCloskey “I have enjoyed sampling the 2013 and 2014 vintages side-by-side, with the ’13 offering more volume and richness (albeit, restrained). The bouquet is wonderous and conveys warmed oyster shells, cooling graphite, cedar, fresh mint leaf. Black liquorice builds, along with mulberry. You must admire the fruit, tannin and acidity, which are perfectly judged – Orange peel freshness aligning the two wines. Similar to the ’14, this flows with layer upon layer of detailed, effortless complexity. The gentle grip of silky tannins are a delight. I'm left gobsmacked if truth be known. Drink now, as I cannot see how this will improve. Of course, it will age (for a decade or more), but I do not see any benefits post 2025. Decanted for 2-3 hours and served using Zalto Bordeaux glassware.”
98+ Points – Magdalena Sienkiewicz "A richer, more masculine wine comparing directly to the 2014 QotE tasted the same day. The bouquet is incredibly complex yet refined with cassis, cedar infused mulberries, graphite and spices. Delicate aromas of mint and sage add another layer of complexity. The palate is beautifully composed and expansive, but perfectly judged. A touch more grip in the 2013 with an abundance of minerals and earthy complexities. Superb length and structure with an intensely savoury finish. If 2014 is the Queen, the 2013 is the King. Sampled using Zalto Bordeaux glassware following 5 hours of decanting."

98 Points - Stuart McCloskey “This is so suave and effortless, very St Julien if I were to draw a comparison. The bouquet unfurls with such grace, it is rather hypnotic. The palate is fresh and equally graceful – the tannins are ultra-fine. I am sampling this with a beautiful piece of music (Vide Cor Meum – you must try the combination as it’s a wonderful pairing). I suggest finding a quiet corner, a good book and several hours to appreciate the sense of symmetry. The palate gently reveals crème de cassis, liquorice and a little sweet raspberry – superbly ‘classical.’ I detect orange peel developing towards a perfectly dignified finish. With time, the melioration in the glass is breathtaking… A genius bottle of mesmerising Cabernet Sauvignon. Delightful and ready to enjoy now. Decanted for 2-3 hours and served using Zalto Bordeaux glassware."

Utterly beguiling perfume filled with mulberries, cherries, pencil shavings and spice box all the mere tip of the iceberg. This superb Cabernet does not stop giving even after several hours in a decanter. Elegant mint and dried herbs prevail while black liquorice develops with aeration. The palate is equally mesmerising and simply melts away leaving you in awe. So fine, so complete and so exquisite. Drinking beautifully today, immerse yourself and enjoy over a peaceful afternoon. 97-98 Points - Magdalena Sienkiewicz "The perfume is incredibly complex even though the wine is a touch cold when I first pour it into my glass. Still, it oozes gracefully with blackberries, red and black currants, pen ink, pencil shavings and a whole array of beautifully lifted floral notes. Bay leaf, mint, tobacco leaf with a whiff of star anise complete the stunning bouquet. The palate offers plenty of class with an abundance of morello cherry, graphite, dried herbs and tobacco. There is an overwhelming sense of purity with svelte and slightly dusty tannins which add lovely texture and a luxurious palate feel. Impeccably crafted, impressive and immensely pleasurable. Decant for 2-3 hours and watch it unfurl. Sampled using Zalto Bordeaux glassware."
97 Points - James Halliday "Open-fermented, plunged three times daily, before 17 days on skins, 3 years in barrel plus another 15 months of settling prior to dispatch, the result is a lustrous cabernet. Crushed herb melds effortlessly with cassis, violet, gummy bear pastille, black olive and a swab of bay leaf tannins. There is so much glycerol, that it is already a nice drink. Perfumed and inviting. However, my suggestion is to test your patience, cellaring it for 8 years onwards."
